Our Kitchen Manifesto

-We exist to offer decent jobs
and foster cooking talent in Nicaragua.

-We will innovate new uses and
combinations for cacao and tropicals
ingredients.

-we will make chocolate only directly
from unprocessed raw cacao seeds,
free of pesticides.

-we will use only fresh localy grown
all natural ingredients.

-We will slowly wean oursleves from
unsustainable technolodgies until we
reach self sufficiency.

-We will never forget that there is no
such thing as a useless plant, and
that all plants are gifts of the earth
to be treasured, honored, and studied
with great care.

-We will pursue quality over
quantity

After four months of research and development
spent creating our original recipe and technique,
the Momotombo Chocolate Factory was born
in December of 2004. It was born out of a need
to create sustainable jobs for talented Nicaraguan
women. Nicaragua grows some of the best Cacao
in the world yet lacks a chocolate industry. We have decided to utilize what we learned in our chocolate experiments to help create jobs for cooks and reknew the growth of an old tradition of cacao. Nicaraguans are lovers
of this sacred plant and traditionally eat or drink it within countless foods consumed daily in the country.

Industriliazed chocolate
has been outside the realm of traditional methods
keeping the wealth of chocolate in the hands of
the rich who can afford expensive machinery.

Yet as this is written around the world there are
silent spoon revolutions taking place as people
rediscover the lost art of making chocolate fresh,
at home in their kitchens, or their farms.

It can be foreseen that every country in the
world that grows Cacao will undergo the
same influence as people wake up to the fact that
they too can make unbelievably good chocolate.
